The premium shoulder bacon is trimmed by hand and massaged with sea salt for several days. After maturing for about 3 months, the meat is washed and marinated with rosemary. The rosemary bush grows in the northern Italian Langhe region and is a real crowning glory of the Lardo al Rosmarino Piccolo. Lardo al Rosmarino Piccolo combines meat, bacon and spices in perfect harmony. Thinly sliced, it adorns every bruschetta. Delicious with a glass of Dolcetto d’alba from Piemonte.
